We’re seeking a Sous Chef to support our Head Chef and help lead our talented kitchen team through busy production days with clarity, consistency, and heart. This role is hands-on, dynamic, and designed for someone eager to both learn and lead. With Bellevue as our first U.S. opening, this position carries significant opportunity for future growth with BA. ⸻ The Role: As Sous Chef, you’ll be the second-in-command in the kitchen, a vital player in making sure daily prep, production, and service flow run seamlessly. You’ll step up when the Head Chef is away, mentor junior bakers, and ensure every loaf and pastry meets BA’s uncompromising standards. ⸻ What You’ll Do • Support the Head Chef. Lead the kitchen team during high-volume production days; take charge confidently when the Head Chef is not on site. • Guide Production. Manage daily prep, mixing, baking, and service flow so that schedules stay on track and products stay fresh. • Baking Expertise. Demonstrate strong hands-on skills in artisan sourdough, naturally leavened breads, and laminated doughs (viennoiserie). Model craft, precision, and speed. • Quality & Safety. Oversee consistency from raw ingredients to finished product. Enforce sanitation, health, and safety standards, modeling ServSafe best practices and Washington State requirements. • Train & Mentor. Coach junior bakers and newer team members; build clear training systems and provide constructive feedback. • Plan & Organize. Oversee daily production timelines, track inventory with xtrachef (ERP), and assist with ordering and stock rotation. • Cross-Team Communication. Coordinate with FOH and management to align production with sales demand; use Slack and Toast for smooth communication and sales feedback. • Daily Ops. Assist with kitchen organization, cleanliness, equipment care, and ensuring production areas are always guest-ready. ⸻ Requirements • 4+ years of professional baking experience, ideally in a high-volume environment. • 2+ years in a leadership, supervisory, or lead baker role. • Strong skills in artisan sourdough and naturally leavened breads; experience with laminated doughs and pastries is a big plus. • Comfortable directing production flow and giving clear instructions during peak times. • Familiarity with Toast POS (for 86’ing, menu availability, and feedback loops) and Slack communication. • Experience with inventory systems such as xtrachef (ERP) preferred. • ServSafe Manager Certification (preferred) and WA Food Worker Card (or willingness to obtain). • Calm, clear communicator with strong organizational skills; reliable and punctual. • Able to lift up to 50 lbs (flour bags, trays) and work early mornings, weekends, and holidays as needed. ⸻ Bonus Points If You… • Have a deep love of bread and geek out over fermentation. • Are a morning person (we start early!). • Thrive in a supportive but fast-paced team environment. ⸻ Why Work With Us • Be part of a first.
