About the Role: This is a culinary position with purpose. The breakfast program is a major pillar of the concept’s identity, offering a blend of fresh, energizing dishes and craveable comfort. You’ll lead the early-day operation with creative input and autonomy—setting the tone daily for an experience that draws both locals and travelers. What You’ll Do: • Operate independently in the morning, executing breakfast service with speed, precision, and polish. • Prepare and plate a Mediterranean-inspired menu that spans clean, bright items and refined classics. • Lead and mentor a breakfast line team while maintaining calm, organized energy in the kitchen. • Maintain mise en place, station readiness, and prep systems to ensure consistency and flow. • Collaborate with the culinary team on seasonal updates and service improvements. Who You Are: • A career-driven sous chef or lead cook with2–4+ years’ experience in high-volume breakfast service. • Confident running a morning kitchen solo and leading a small team to consistent execution. • Brings professionalism, creativity, and a genuine love for breakfast cuisine. • Experienced in banquet and large-format prep. • Handles banquet and event prep with consistency and precision. • Familiar with Mediterranean or wellness-forward food styles and plating. • Reliable, clean, and thrives in early hours (5:30 AM start time).
