CHEF DE CUISINE – NEW RESTAURANT OPENING Location:Little Ruby’s Cafe, Dallas, TX Salary:$90,000 – $95,000 + Bonus + Benefits Be Part of Something New Little Ruby’s Cafe is making its debut in Dallas, and we’re looking for a drivenChef de Cuisineto help us launch with excellence from day one. This is not a creative or menu-development role — it’s anoperations-first leadership positionwhere your skills in execution, consistency, and team building will define the guest experience. About Little Ruby’s Cafe At Little Ruby’s Cafe, everything we serve is made from scratch — fromfreshly extruded pastasto house-prepared sauces and thoughtfully sourced seasonal ingredients. We pride ourselves on high-quality products, attention to detail, and warm hospitality. Our new Dallas location will behigh-volume, upscale, and full of energy, and we’re looking for a CDC who thrives in that environment. What You’ll Do • Lead theback-of-house operationsfor a busy, high-performing scratch kitchen. • Build, train, and motivate a top-tier kitchen team for a smooth grand opening and beyond. • Maintain absolute consistency in recipes, portion control, and plating. • Drive operational efficiency: oversee scheduling, inventory, ordering, and cost control. • Enforce health, safety, and sanitation standards at all times. • Be present and engaged on the line during service, setting the standard for pace and quality. • Partner with leadership to achieve profitability and operational targets. What We’re Looking For • 5+ yearsof experience as an Executive Chef or Chef de Cuisine in an upscale, high-volume setting. • Deep expertise inItalian cuisine. • Proven success managing staff and running efficient, profitable kitchens. • Highly organized, detail-focused, and adaptable to fast-changing service demands. • Strong knowledge of P&L, labor management, and operational systems. • Able to work evenings, weekends, and holidays as needed.
