Knowledge of banquet operations with open availability. The Chef de Partie will assist the Executive Chef and Executive Sous Chef by overseeing the day-to-day culinary operations including training, supervising staff, and monitoring food quality. Specifically, you would be responsible for performing the following tasks to the highest standards: β€’ Overseeing day-to-day operations of restaurant culinary areas β€’ Responsible for all food preparation, productivity, and control for restaurant β€’ Training, supervising, and working with all cooks and kitchen staff in order to prepare, cook, and present food according to standard hotel/restaurant recipes β€’ Creating a positive environment in which all employees have the ability to maximize their potential β€’ Ensuring employees follow safety, sanitation, and security procedures β€’ Being an inspirational leader and developer of talent and have the ability to maintain associate satisfaction β€’ Effectively partnering with the restaurant staff and front of house managers β€’ Developing and maintaining positive relationships with associates, customers and vendors β€’ Manages all Kitchen operations when Executive Chef and Executive Sous Chef are not present What are we looking for? β€’ Demonstrate a passionate commitment to the hospitality business β€’ Extensive culinary skills β€’ Experience must include food cost management and banquet production with an emphasis on presentation β€’ Fully knowledgeable and experienced with forecasting, budgeting, labor management, and purchasing β€’ Proven success in a high-quality operation β€’ Must be creative, knowledgeable of current culinary trends, and a professional who realizes that they are a strategic partner in the success of this hotel β€’ Thorough knowledge of food products, standard recipes and proper preparation β€’ Ability to analyze, forecast data, and make judgments to ensure proper payroll and production control β€’ Strive to build and maintain good and productive relationships with all team members across departments β€’ Be honest, reliable, and timely β€’ Maintain excellent timekeeping and attendance High School diploma or equivalent. Minimum of two to four years of culinary schooling. Minimum of two years of experience as a restaurant Sous Chef in a high-volume restaurant operation. Ability to obtain any governmental required licenses or certificates, such as Food Handler’s. CPR and/or First Aid training preferred. Must be willing and have the ability to work a varied schedule including evenings, nights, and weekends. Must possess strong communication and listening skills, excellent speaking, reading and writing. Multiple language abilities preferred; fluency in English required and Spanish desired. This position requires physical stamina. To fully perform his/her duties, the Chef de Partie will be required to lift, carry, walk, sit, bend, push, and pull. Must be able to stand and walk for long periods of time throughout property. Must be able to lift and/or carry items weighing up to 50 pounds on a regular basis.
