Reports To: Executive Sous Chef

This position requires a lead from the front mentality; actively working in kitchen while ensuring production needs are being met and quality standards are maintained. Responsible for the day-to-day operation of the entire production facility. This position reports directly to the Executive Sous Chef.
Job Duties
β’ Supervises all kitchen areas to ensure a consistent, high-quality product is being produced.
β’ Ensures that all temperature and shrink logs are completed daily.
β’ Ensures that all opening and closing check lists are completed.
β’ Ensures that daily and weekly kitchen cleaning checklists are completed.
β’ Ensures that daily temperature logs of dishwasher are completed.
β’ Helps maintain overall kitchen cleanliness standards that have been set.
β’ Works with Executive Sous Chef to plan and execute daily production needs.
β’ Actively works amongst kitchen staff, producing food and ensuring quality standards are being met.
β’ Leads from the front, actively demonstrating and coaching associates on proper procedures and protocols.
β’ Ensures that all new hires are thoroughly trained in all aspects of their respective job requirements.
β’ Encourages and builds mutual trust, respect, and cooperation among team members.
β’ Maintains the productivity level of all kitchen staff, ensuring that production goals are being met in a timely manner.
β’ Work with receiver to properly rotate product to mitigate shrink.
β’ Monthly inventory management.
β’ Any other tasks as deemed necessary by the Executive Sous Chef, Operations Manager, or Commissary Director.
