Key ResponsibilitiesResearch & Development (R&D) & Innovation • LeadR&D effortsto develop and refine seasonal menu items, incorporating modern techniques and industry trends. • Drivecreativity and innovationby researching new flavors, ingredients, and production methods to enhance product offerings. • Develop and executerecipe formulationfor new and existing products, ensuring consistency and efficiency. Operational & Production Leadership • Oversee the production of a wide variety ofpastries and desserts for large product distribution, ensuring consistency and quality. • Supervise daily baking operations, ensuring recipes and standards are followed while controlling food and labor costs. • Lead and manage a team of8-10 employees, including recruiting, training, developing, and coaching staff to maintain a high-performing bakery team. • Collaborate with staff to develop and implementseasonal and specialty product offerings, emphasizing high-quality ingredients and techniques. • Monitor and manage inventory levels, ingredient sourcing, and supplier relationships to ensure efficient and cost-effective production. • Develop and execute training programs for staff to uphold quality standards and refine techniques in both pastry and bread baking. Quality Control & HACCP Compliance • Maintain strict adherence toHACCP certification standards, ensuring all food safety, sanitation, and quality control protocols are met. • Hold team accountable for food safety, sanitation, and best practices in bakery production. • Track and report food waste, monitoring inconsistencies in food prep and addressing inefficiencies with staff. Technology & Inventory Management • Utilizecomputer systems and digital tracking toolsto manage production schedules, inventory, and ingredient sourcing efficiently. • Implement and maintainspreadsheets, production tracking, and waste control systemsto streamline operations and optimize costs. Qualifications • 10+ years of professional baking experience, with at least8 years in a senior management roleleading teams in a bakery or pastry production setting. • Experience inMichelin-starred restaurants, fine dining, or large luxury hotels. • Strongleadership, mentoring, and people management skills, with a track record ofbuilding and training high-performing teams. • Expertise inpastry and bread baking, with a deep understanding of large-scale production methods. • Proficiency inrecipe development, scaling for high-volume production, and quality control. • Aculinary degree or diplomafrom an accredited institution is preferred but not required. • Strongorganizational and time-management skillsto handle multiple tasks in a fast-paced environment. • A keen eye for detail, ensuring product consistency and excellence. • Knowledge offood safety regulations, sanitation standards, and best practicesin commercial baking operations.
