About the Role
The Executive Sous Chef is responsible for providing supportive leadership to kitchen staff, assisting the Director of Hospitality in monitoring kitchen activities, expediting orders to ensure quality taste or presentation and taking on additional responsibilities in the Executive Chef’s absence to ensure that kitchen staff has proper direction.
Responsibilities
• Oversee department inventory procedures with accountability for checking incoming orders and deliveries, communicating effectively with vendors, and notifying Director of Hospitality if there are any delivery issues or inconsistencies
• Conducts daily shift line checks of kitchen to ensure execution of prep work is accurate, complete, and in accordance with food safety and sanitation regulations
• Follows proper cooking techniques for all dishes, ensuring food quality and timeliness
• Responsible for proper and accurate labeling with date on all food containers to monitor freshness of all food and ensure first-in, first-out organization in walk-ins in accordance with food safety and sanitation regulation
• Ensures preparation of all meals in compliance with standardized recipes and portion volume, assisting team members during peak service times
• Ensures cleanliness and maintenance of all work areas, utensils, and equipment, communicating any repairs needed
• Creates specials for the kitchen, working with the Director of Hospitality and/or team on flavor profile, food cost, and presentation
• Educates and serve as point person for team on menu knowledge, allergens, specials, and promotions
• Displays exceptional leadership by providing a positive work environment, counseling employees as appropriate, and demonstrating a dedicated and professional approach to management
• Ensuring kitchen staff adhere to set standards, procedures, department rules and sanitation requirements
• Providing management and support to the kitchen staff, ensuring efficiency in the daily operation
• Discussing daily food cost reports with key kitchen and F&B staff
Experience & Skills
• High School Diploma or GED required
• Must be 18 years or older
• Ability to read and follow recipes
• At least 2 years high-volume cooking experience with extensive knowledge in fine dining restaurant service.
• Food Handler’s Certification
• Understanding of various cooking methods, ingredients, equipment and procedures
• Ability to work varied shifts including weekends and holidays
• Strong knowledge of back of the house operations including foods, beverages, staff supervision, inventory, and food safety

$55,000 - $70,000 a year + bonus eligibility
