Head Sushi Chef - Omakase FULL TIME Head Sushi Chef $30/hour + TIP POOLS ($150-$200 avg per shift) Required Skills: Quality Control, Nigiri, Maki, Bowls, Hand Rolls, Sashimi, General Prep, Inventory and Ordering - Good command of English - Guest Focused - Hospitality Driven - Basic computer literacy - Financially astute ( can read a P&L) - Strong leadership skills - Inspirational leadership style -Strong knowledge of NYC DOH standards -Highest standard of cleanliness and food safety practices Summary In the role of Head Chef, you will oversee all sushi operations, ensuring the highest standards of food preparation and service. Reporting directly to the General Manager, you will utilize your Sushi expertise and leadership skills to manage a staff of 3-5. Must be able to engage with guests, work cleanly, and develop other sushi chefs. Responsibilities • Oversee fish preparation and cooking processes to ensure high-quality meals. • Lead with example by delivering excellent guest service • Implement and maintain food safety and handling standards. • Maintain food purchasing inline with company directives • Monitor inventory levels and ensure proper stock management. • Conduct quality control checks to maintain culinary excellence. • Utilize computer skills for scheduling, reporting, and menu planning.
