About Us We are a high-end omakase restaurant specializing in Edomae-style sushi. Our team is dedicated to craftsmanship, premium seasonal ingredients, and delivering an unforgettable dining experience for our guests. Job Summary We are seeking a dedicated and efficientSushi Chef / Kitchen Team Memberto join our culinary team. The ideal candidate will play a vital role in fish and sushi preparation, food handling, and assisting the senior sushi chef. This position requires high efficiency, technical skill, and teamwork to ensure our kitchen operates smoothly. Key Duties & Responsibilities • Assist in preparation and execution of an omakase-style menu under the direction of senior chefs. • Properly fillet, butcher, and prepare a wide range of fish and shellfish, including (but not limited to) aji, saba, iwashi, tuna, kinmedai, amadai, kinki, kohada, and kegani. • Prepare high-quality nigiri and sashimi with precision and consistency. • Follow proper Edomae techniques and execute them accurately under instruction. • Handle, store, and label ingredients in compliance with food safety standards. • Maintain kitchen cleanliness and organization at all times, including dishwashing tasks during slower periods. • Assist with menu planning by providing input on seasonal items and specials. • Operate kitchen equipment safely and efficiently, including knives and specialty tools. • Support catering or special events, preparing food according to specific requirements. • Collaborate with team members to ensure timely service during peak hours. • Follow recipes and guidelines to maintain consistency in food quality and presentation. • Perform other reasonable kitchen-related duties as assigned to support smooth operations. Skills & Qualifications • Proven experience making high-end sushi; prior omakase experience is preferred. • Strong knife skills; ability to butcher and prepare fish with precision. • Familiarity with traditional Edomae techniques. • Knowledge of food handling practices and California food safety regulations. • Ability to work efficiently in a fast-paced environment while maintaining attention to detail. • Team player with strong communication skills and a collaborative attitude. • Kitchen cooking experience is a plus. • Creativity in menu planning and understanding dietary needs is also a plus. Work Environment This is a fast-paced professional omakase kitchen. All team members are expected to maintain high standards of professionalism, teamwork, and respect.
