Job Description
Urth Caffé is seeking a highly skilled and experiencedKitchen Lead with USDA and HASP certificationto oversee our commissary kitchen operations. This key leadership role ensures the daily production of high-quality food items, while maintaining strict adherence to USDA food safety protocols. The Kitchen Lead supports the Commissary General Manager and collaborates closely with culinary and baking teams to produce consistent, safe, and premium products. This position plays a critical role in staff supervision, kitchen workflow, and regulatory compliance.
Responsibilities:
• Lead and supervise kitchen staff in daily food preparation activities.
• Ensure all products meet USDA standards and follow Hazard Analysis and Sanitation Procedures (HASP).
• Maintain full compliance with food safety, sanitation regulations, and internal quality control policies.
• Oversee and manage inventory, including ordering, receiving, and storing of supplies.
• Train and mentor kitchen team members to uphold production standards and safety procedures.
• Partner with the Commissary GM to improve kitchen operations and meet production goals.
• Perform regular HASP documentation, monitoring, and reporting.
• Schedule and conduct maintenance checks for kitchen equipment.
Skills:
• Strong working knowledge of USDA regulations and HASP procedures.
• Expertise in large-scale food production and/or commissary operations.
• Excellent leadership, coaching, and interpersonal communication skills.
• Capable of multitasking in a fast-paced, high-volume environment.
• Solid understanding of inventory control and cost management.
• Detail-oriented with strong organizational and problem-solving abilities.
Qualifications
• Minimum 3 years of experience in food service/kitchen leadership.
• USDA/HASP Certification (Required).
• ServSafe or other food handler certification (Preferred).
• Prior experience in a food production or manufacturing environment. · Familiarity with Aloha and Micros POS systems.
• Must be available to work a flexible schedule including mornings, evenings, and overnights as needed.
This position does not follow a set schedule; the shifts and workdays for this position will vary. The following are some of the shifts available for this position, but these shifts are not guaranteed and are subject to change at the Commissary Manager's and/or Urth Caffe's discretion.
• 6:00AM-4:00PM
• 12:00PM-10:00PM
• 9:00PM-7:00AM
