Kitchen Manager/Chef

One Allegiance Brewing is a thriving brewpub located in Chicago Ridge, IL situated on the busy Harlem Ave. We take pride in our diverse selection of beers brewed on-site, carefully crafted beverage program and delicious scratch kitchen menu featuring Neapolitan-style pizza and elevated pub fare. We are seeking a confident and enthusiastic individual to join our team, lead kitchen operations and help take our brewpub to the next level. KITCHEN MANAGER/CHEF SPECIFIC RESPONSIBILITIES TO INCLUDE: Staff Management and Training • Recruit, hire, and train kitchen staff. • Schedule staff shifts to ensure adequate coverage during peak hours. • Foster a positive work environment and resolve any staff conflicts or issues. Menu Planning and Development • Collaborate with Ownership and other kitchen staff to develop and update menu items. • Ensure all dishes are prepared to the highest quality and consistency. Inventory Management • Order food supplies maintaining optimal stock levels. • Conduct regular inventory checks to track usage and minimize waste. • Manage vendor relationships and negotiate pricing for ingredients and supplies. Food Safety and Sanitation • Ensure compliance with health and safety regulations. • Implement and maintain food safety procedures, including proper storage and handling. • Conduct regular inspections of the kitchen and equipment for cleanliness and functionality. Operational Management • Take hands-on role in food preparation and presentation actively leading BOH staff. • Oversee daily kitchen operations, ensuring smooth and efficient service. • Troubleshoot any operational issues that arise during service. Quality Control • Ensure all dishes meet quality standards before leaving the kitchen. • Continuously seek ways to improve food quality and presentation. Equipment Maintenance • Ensure all kitchen equipment is properly maintained and in working order. • Evaluate and recommend new equipment purchases as needed with Ownership.
