Job Summary
The Pastry Chef III plays a key leadership role in driving innovation, quality, and operational excellence within Anton’s culinary team. This position leads recipe development, cost optimization, team training, and production planning to ensure that Anton’s products meet the highest standards of consistency, creativity, and profitability. With a deep understanding of both the craft and the business of pastry, the Pastry Chef III helps shape the strategic direction of the production team while mentoring future leaders and maintaining a strong hands-on presence.
Responsibilities
• Recipe Development & Innovation
• Lead the creation of new recipes aligned with seasonal trends, customer preferences, and brand direction
Strategic Cost Management & Operational Efficiency
• Analyze ingredient pricing, production processes, and market trends to optimize food cost
• Drive process improvements that increase production efficiency and reduce waste
• Collaborate with leadership to set pricing strategies that balance quality, brand value, and margin targets
Training & Team Development
• Develop structured training programs to improve skill sets, consistency, and efficiency
• Standardize onboarding and rollout procedures for new products
• Identify skill gaps and create development plans to build a high-performing, autonomous team
Quality Assurance & Continuous Improvement
• Oversee quality systems across all production shifts and locations
• Build feedback loops, perform audits, and implement corrective actions to uphold product consistency
• Lead initiatives to improve customer satisfaction and brand integrity
Scheduling, Planning & Staffing
• Design and maintain daily task structures and production schedules
• Analyze demand trends to plan capacity and allocate labor effectively
• Adjust output and staffing in real time to meet shifting business needs
• Take ownership of hiring and onboarding, ensuring cultural and skill alignment
Leadership and Skill Development
• Take initiative in identifying areas for improvement within the kitchen
• Build leadership capabilities through hands-on problem-solving and team coordination, with the goal of transitioning into a supervisory role
• Take relevant courses or attend training sessions to strengthen technical skills and support ongoing growth toward a future leadership role
• Ensure all recipes are scalable, cost-effective, and executable across teams and locations
• Mentor team members on recipe development to build internal R&D capabilities
• Guide the team through testing and documentation of new products
Minimum Qualifications (Knowledge, Skills, and Abilities)
• 6–8 years of pastry or food production experience, including 3+ years in a supervisory role
• Advanced knowledge of pastry techniques, recipe development, and ingredient behavior
• Proven experience in recipe costing, margin analysis, and aligning product development with business goals
• Strong leadership skills with the ability to train, delegate, and coach for performance
• Experience implementing quality control systems and production planning
• Proficiency in tools for documentation, costing, and scheduling (e.g., Excel, Google Workspace)
• Strong organizational, analytical, and time management skills
• Availability to work weekends, holidays, and overtime as needed
Job Type: Full-time
Pay: $75,000.00 - $85,000.00 per year
