JOB PURPOSE:
Responsible for the organization, procurement and of all food items and requiring cooking & storing. Should know and not limiting of all line stations responsibility. Helping to train and to organize newly hires or trainees. In charge of checking all the stations produce both specialty items, high volume products and Nobu sauces. Facilitates all food preparation of stations requiring various cooking methods, knife skills and organizing/procuring of ingredients for the restaurant. Follow all Restaurant Policies and Procedures.
SUPERVISOR:Executive Chef
RESPONSIBILITIES:
• Follows all applicable safety procedures while on their work station.
• Ensures all food is prepared on clean surfaces (and with clean utensils) in accordance with Nobu and county health department regulations.
• Ensures food quality meets Nobu Restaurant and Nobu Hotel standards prior to being served.
• Remains appropriately groomed and wearing the uniform provided.
• Ensures all items prepared on their work station are presented in accordance with departmental specifications.
• MEP/Preparation list is checked & done daily.
• Ensures at all time their stations are Clean and Kept to Departmental Standards.
• Walk ins and other storage facilities are kept clean.
• Assures all Items are always on stock and Kept to Departmental Standards.
• Provide any other task asked by management.
• Receive and put away all product on delivery.
• Prepares all stocks, sauces, and specialty items for the restaurant.
• Marinate, Cook and season all products needed for the restaurant.
• Complete pre-cooking preparation work on fruits and vegetables (i.e., cleaning, slicing etc).
• Prepare all food grilled, sautéed, fried and cold items for the restaurant.
• Provide relief and assistance at all line stations.
• Clean food spillage at their work station.
• Organize the cooking line with Cooks 1 & 2 for safety and efficiency.
• Leading & Organizing the Assigned Line cooks of the Designated Department
• Giving the right attitude and morale for the line.
• Assessing & Discarding spoiled food from the kitchen as discovered.
• Prepare fresh herbs and spices for use in the restaurant.
• Additional related duties as requested by the kitchen supervisory staff.
• Making a system on Procuring-Preparing-Storing-Cooking & Plating.
• End of day spearheading the cleaning and organization of assigned work stations & storage spaces.
Non-Physical Qualifications:
• Must have advanced reading skills.
• Must have advanced mathematical skills.
• Advanced computer skills in Microsoft Word, Excel, PowerPoint, Restaurant 365
• Culinary Arts degree recommended.
• At least 4-5 years cooking experience in high-volume cooking.
THE PHYSICAL QUALIFICATIONS LISTED BELOW ARE GENERAL REQUIREMENTS FOR THIS POSITION. THE ACTUAL EXERTION LEVEL (AND FREQUENCY OF USE) CAN AND DOES FLUCTUATE DEPENDING ON THE INDIVIDUAL TASKS BEING PERFORMED.
QUALIFICATIONS:
• Ability to work from a standing position for extended periods of time.
• Ability to lift approximately 40-50 pounds.
• Ability to perform reaching, stooping, and/or crouching motions repeatedly.
• Dexterity in the hands and fingers needed to effectively manipulate the tools and utensils used in food preparation.
• Visuals abilities (closeness & depth perception) to ensure quality food preparation and personal safety with various types of equipment.
• Physical tolerance needed to work in a humid environment that at times will exceed 100°F.
• Physical tolerance for minimum 40 hours of work a week but can exceed up to Management Discretion.
