**Overview:**
We are seeking an experienced Sous Chef to join our culinary team. The ideal candidate will have a passion for food preparation and management, with a strong background in high level production. This position will be responsible for ensuring the highest quality of food and service at all levels andy is responsible for supervising and developing teams working across Universal Studios Hollywood.
**Responsibilities:**
β’ Order supplies, food and ingredients based on rapidly shifting demand.
β’ Hire and train kitchen staff in specific stations, and cross-train as necessary.
β’ Create schedules for kitchen staff to ensure there are always enough workers to meet the demand.
β’ Maintain inventory levels and conduct full inventories.
β’ Schedule and oversee necessary maintenance and repairs on kitchen appliances.
β’ Assist the management team with menu changes and adjustments.
β’ Respond personally to guest questions, special recipe requests and complaints.
β’ Maintain a clean workspace and all times.
β’ Work at a fast and efficient pace. The Sous Chef is a βworking chef.β
β’ Ability to read and follow recipes as well as follow up with prep and line cooks food preparation.
β’ Has a thorough knowledge of food cost, labor cost and inventory functions.
β’ Chemical safety comprehension.
β’ Analyze financial reports to quickly identify and address trends and issues in area performance, including cost of goods, variable labor, and profitability.
β’ Exceed annual operating profit targets.
**Experience:**
β’ Proven knowledge of Word and Excel
β’ Minimum 3 years of culinary experience, which includes working in a high volume fast pace restaurant or similar high production environment
β’ Proven ability to work within a fast paced, guest oriented and highly collaborative environment.
β’ Partner with Human Resources for developing and/or improving training, including new hire training, for the culinary team
**Skills:**
β’ Proven track record and experience in the development and implementation of strong training programs and tools developed to reduce employee attrition and create internal culture of development for staff.
β’ Excellent management skills in leading a diverse team and working under tight and fast track deadlines.
β’ Strong P&L experience, command of budgeting and costs controls.
β’ Excellent verbal and written communication, interpersonal, organizational and multi-tasking skills.
β’ Ability to effectively communicate across all lines of business, and with all levels of management.
β’ Strong organizational, planning, delegation, mentoring and coaching skills.
β’ A strong passion for delivering the highest quality of guest service and superior food concepts.
