Job Description Job Description Summary: The Sushi Chef II position is a skilled role in our organization. Building on a foundation of prior kitchen experience, you will demonstrate solid knife skills, knowledge of sushi rolling fundamentals, and a commitment to food safety. The Sushi Chef II’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and maintaining a clean and safe work environment. To be successful as a Sushi Chef II, you should ensure that all ingredients used in dishes are of the highest quality. You will minimize waste and costs through proper utilization of resources and handling of food and equipment. Ultimately, an exceptional sushi chef should work well under pressure and maintain restaurant quality standards during assigned work hours. You will lead by example at the sushi bar ensuring necessary preparation, smooth operations, and excellent customer service, engaging the customer Key Competencies: People Skills, Expert Culinary Skills, Product Knowledge, Quality and Food Safety, Profit Knowledge and Waste Control Duties and Responsibilities: • Skilled in cutting, slicing, and filleting different types of fish and vegetables • Preparing sushi rolls and other dishes according to training guide/manual specifications, following established standards for quality, portion size, presentation, and food safety • Inspecting the quality of fruits, vegetables, and fish, and informing the STL when quality does not meet standards • Maintaining a clean, organized, and sanitized work environment, including sterilizing utensils, instruments, and equipment before each use • Monitoring food waste and costs and making efficient use of resources to support kiosk goals • Reporting any issues with kitchen equipment to the manager on duty • Greeting and communicating with customers to ensure they feel welcomed and valued This job posting describes the general duties and responsibilities for the position. Other duties may be assigned as needed. Qualifications Requirements: • Minimum of six months in the food service or kitchen environment; sushi rolling experience preferred • Proficient knife skills, including preparation of fish for sashimi and nigiri, and vegetables for sushi rolls and garnishes • Food handler’s license preferred (can be obtained upon hire); thorough knowledge of food safety regulations a plus • Ability to read, write, and communicate effectively in English • Capable of standing for extended periods and working efficiently under pressure • Professional demeanor with a commitment to teamwork, company values, and excellent customer service Additional Information Hana Group North America is an Equal Opportunity Employer Salary: $18.50 - $20.00 USD hourly Work Location: In person
