Job description Job title:Sushi Chef Who we are: Big-Dill Hospitality is a family-owned restaurant group that owns and operates Muchacho Tex-Mex, Whistle Britches, Even Coast and coming soon Casa Brasa, Maroma and many more unique and fantastic dining concepts coming online in the DFW area. Helmed by Chef Omar Flores, a two-time James Beard Semi-Finalist, Best Chef SW and Dallas Rising Star Chef, this is Chef Flores’ newest passion project several years in the making. Position Overview: We are seeking a skilled and motivated Sushi Chef to support the Head Sushi Chef at Casa Brasa. The ideal candidate will have hands-on experience in sushi preparation, strong knife skills, and an eye for precision and presentation. This role will focus on preparing and serving high-quality sushi, tiraditos, and sashimi while assisting with sushi bar operations and ensuring consistency in execution. The Sushi Chef will also support prep, food safety, and teamwork to deliver exceptional dining experiences. Key Responsibilities: β€’ Sushi Preparation & Execution β€’ Prepare and serve a variety of sushi, sashimi, nigiri, tiraditos, and rolls to the highest quality standards. β€’ Maintain consistency in taste, texture, and presentation across all sushi items. β€’ Assist with preparation of sauces, garnishes, and accompaniments. β€’ Support for Head Sushi Chef β€’ Execute the Head Sushi Chef’s direction on menu items and specials. β€’ Assist with daily setup and breakdown of the sushi bar. β€’ Help with ordering, receiving, and storing seafood and ingredients. β€’ Food Safety & Sanitation β€’ Handle raw seafood with strict adherence to food safety standards. β€’ Maintain cleanliness and organization of sushi bar and prep areas. β€’ Follow all sanitation, storage, and labeling protocols. β€’ Team Collaboration β€’ Work closely with the Head Sushi Chef, BOH team, and FOH team to ensure smooth service. β€’ Communicate effectively during prep and service to maintain efficiency. β€’ Support other kitchen tasks during downtime as needed. Ideal Candidate: β€’ 1–3 years of sushi preparation experience in an upscale or sushi-focused restaurant. β€’ Strong knife skills and understanding of sushi techniques (sashimi, nigiri, maki, tiraditos). β€’ Familiarity with Nikkei cuisine (Latin-Japanese fusion) preferred. β€’ Knowledge of food safety and sanitation standards in a sushi kitchen. β€’ Team-oriented with a positive, professional attitude. β€’ Bilingual proficiency in English and Spanish a plus, but not required. Physical Demands: β€’ Ability to work in a standing position for 8-10 hours per day β€’ Ability to lift 60lbs (50lbs overhead) β€’ Stand for a long period of time. β€’ Be able to kneel, crouch, stoop, twist, reach, push, pull and grasp throughout the day. β€’ Hearing and communicating in person or over telephone.
