Job Description
Position Summary:
The Sushi Chef is responsible for preparing and presenting high-quality sushi in alignment with EJL Entertainment’s(dba Yama Sushi Marketplace) culinary standards. This role involves expert knowledge of sushi preparation, seafood handling, food safety, and presentation. Sushi Chefs work closely with kitchen and front-of-house teams to ensure a seamless guest experience and support daily kitchen operations.
Essential Duties and Responsibilities:
• Prepare sushi including nigiri, sashimi, maki, hand rolls, and specialty items according to brand specifications
• Ensure seafood quality, freshness, proper storage, and handling at all times
• Monitor and maintain sushi bar cleanliness, workstation and equipment functionality
• Demonstrate expert knife skills, cutting, and portioning techniques
• Collaborate with Sushi Helpers on new menu development, specials, and seasonal offerings
• Manage inventory for sushi ingredients and assist in placing supplier orders
• Ensure compliance with all food safety and sanitation guidelines
• Mentor and train kitchen staff, including sushi helpers
• Maintain appropriate portion control and waste reduction standards
• Assist in daily prep, kitchen closing, and opening tasks as assigned
• Consistent quality, speed, and presentation in all sushi items
• Compliance with health codes and kitchen SOPs
• Active contribution to kitchen teamwork and training
• Upholds EJL’s guest satisfaction and brand identity standards
Knowledge, Skills, and Abilities:
• Proficiency in traditional and modern sushi preparation methods
• Deep understanding of seafood types, shelf life, and flavor pairings
• Strong knife handling and presentation skills
• Excellent time management and multitasking abilities
• Leadership, communication, and team coordination skills
Physical Requirements
• Ability to stand for extended periods (up to 8 hours)
• Ability to lift up to 40 lbs
• Repetitive motions including cutting, chopping, and reaching
• Exposure to cold food storage and hot equipment
Qualifications:
• 2–3 years professional sushi experience required
• Food Handler’s Certification (required)
• Supervisory or team lead experience preferred
• Knowledge of Japanese ingredients and terminology

Pay: $68,640.00 - $90,000.00 per year
