Join the dynamic team at Mandalay Bay as an Assistant Manager Stewarding, overseeing operations across 30+ kitchens in one of Las Vegas' premier destinations. In this pivotal role, you will lead a dedicated team to maintain the highest standards of cleanliness and efficiency, ensuring seamless kitchen operations that support our diverse culinary offerings. Your expertise in managing large-scale stewarding operations will be crucial in upholding Mandalay Bay’s reputation for exceptional dining experiences.

THE DAY-TO-DAY:

  • Manage Inventory and Costs: Approve and monitor supply requisitions to balance quality, usage, and cost control.

  • Drive Operational Excellence: Supervise daily functions, ensuring alignment with strategic goals and profitability objectives.

  • Uphold Cleanliness and Sanitation: Conduct regular inspections to ensure equipment and kitchen areas meet sanitary standards.

  • Lead and Develop Your Team: Oversee staff with a focus on diversity, training, coaching, and performance feedback.

  • Deliver Exceptional Guest Service: Maintain service standards and brand consistency for a superior guest experience.

WHAT YOU MUST HAVE:

  • 2 years of prior relevant experience in Stewarding, Kitchen Management, F&B Operations, or similar.

WHAT WILL MAKE YOU STAND OUT:

  • Ability to effectively manage and motivate a diverse team, fostering a collaborative and productive work environment.

  • Proven ability to prioritize tasks, and manage operations in a fast-paced, high-volume environment, ensuring efficiency and quality under pressure.

  • Experience working in large-scale resort settings, with an understanding of the complexities involved in managing multiple kitchens and large teams.

  • Experience managing employees using a Collective Bargaining Agreement.
