Job Description
Summary
This position is located in the Bowling Center, Morale, Welfare and Recreation (MWR) Department, U.S. Commander Fleet Activities, Yokosuka, Japan. The Bowling Center provides recreation and food and beverage services. The incumbent will perform a wide variety of simple cooking tasks as a short order cook.

Duties
Cooks a variety of menu items including regular entrees and dessert items.
Roasts, broils, bakes, fries, steams and stews meats, fish, poultry, vegetables, rice and other side dishes.
Cooks meat, poultry, vegetables, soups, sauces, pizza, etc.
Fries items such as hamburgers, chicken, French fries, bacon, etc.
Operates equipment such as grills, griddles, ovens, and ranges to proper temperature.
Rapidly chills and stores the prepared items under refrigeration for long periods of time.
Uses standardized recipes and menus and personal knowledge and experience to measure, assemble, and mix ingredients; regulate cooking temperatures; and add seasoning to foods.
Prepares sliced meats and cheeses, conforming to a specific size requirement or weight specification.
Maintains proper temperature for all foods during holding, transport, reheating and serving to assure quality control and food safety.
Receives instructions in the performance of more difficult food preparation and is normally in training for higher graded position.
Maintains rotation of food inventories to prevent spoilage.
Assists the supervisor or a higher-grade worker in ordering food in accordance with daily and weekly menu requirements.
Prepares cold food platters such as ham, salmon and roast beef platters; salads and hors d'oeuvres.
Obtains utensils needed and sharpens knives.
Washes and cleans utensils and dishes.
Cleans work areas to include walls, floors, equipment, and storage areas.
Assists with coordinating and planning food and beverage needs for special events; plans the cooking process with assistance to produce quick meals and at the proper temperature not limited to preparing and serving food and cleaning work areas.
Assists with monthly inventory count.
Follows all health, safety, security, and good housekeeping rules.
Perform other duties as required and assigned.

Conditions of employment
Exposed to warm and noisy kitchens, steam, fumes and cooking odors. Danger of falling on freshly mopped floors, burns from steam or hot foods, cuts from knives, shocks from electrical machines, and extremes in temperatures.
Required to lift or move objects weighing up to 40 pounds on a frequent basis (utensils or containers of food) as well as stand and walk constantly; on occasion
lifts items over 50 pounds, e.g.; pans of meat.
Qualifications
Knowledge of basic food preparation principles and a practical understanding of the physical changes that occur during the processing and cooking of food.
Working knowledge of the planning process involved in cooking an entire meal including the different preparation methods for various food items, the necessary time for cooking these different items and how to schedule and coordinate their preparation to produce a properly cooked meal on time.
Knowledge of how to prepare sauces.
Knowledge of cold food presentation
Knowledge of standard formulas used in yield testing to determine portion cost and to adjust ingredients in standard recipes when altering the number of servings required.
Knowledge of basic arithmetic such as addition, subtraction, multiplication, division, fractions, and decimals.
A working knowledge of sanitation standards is required as well as knowledge of procedures to prevent contamination.
Knowledge of basic food handling techniques, personal hygiene standards and safe work procedures.
Incumbent needs a thorough understanding of the routine methods and procedures used in all functional areas of the food service operation to include methods and procedures necessary for ordering, issuing and storing food times in accordance with inventory and sanitation requirements.
Skill to train lower grade workers in such methods and procedures.
Ability to evaluate a variety of raw and cooked food items to decide if they are fresh and whether cooked foods are done by their appearance, consistency, texture, and temperature.
Ability to perform tasks involving several procedures and be able to concentrate on work assignments despite interruptions and distractions.
Ability to read and understand written materials.
Ability to apportion, weigh, and measure foods properly and to use electrical appliances, grills, stoves, ovens, and other common and specialized kitchen equipment and utensils.

This position does not have an education qualification requirement

Participation in the Direct Deposit/Electronic Fund Transfer is required.

Non-US Citizen or Non-US Bona Fide Resident Alien (Non-Green Card Holder) applicants who are SOFA sponsored must provide a completed police record check with at least seven (7) years of history from the embassy/consulate of their country of citizenship upon receipt of a formal job offer.
